Bajra Khichdi (Little Millet Khichdi)
Bajra Khichdi is a beloved traditional recipe, especially during winters. Made with pearl millet (bajra) and lentils, this khichdi is not only delicious but also highly nutritious. It is the perfect dish to keep the body warm and energized during the chilly season. Let’s learn how to make this wholesome dish step-by-step.
Ingredients (Serves 4):
- 1.5 cups pearl millet (bajra or little millet)
- 1/2 cup cowpea lentils (chawla dal)
- 8-9 cups water
- Salt to taste
- 2-3 tablespoons ghee (clarified butter)
- 2-3 tablespoons jaggery (as per taste)
Instructions (Total Time: 1 Hour):
Step 1: Soaking the Millet and Lentils
- Wash the millet thoroughly and sprinkle it with a little water. Let it soak for 1 to 1.5 hours, covered with a lid.
- Wash the cowpea lentils and soak them separately during the same time.
Step 2: Grinding the Millet
- After soaking, gently mix the millet with wet hands to ensure it absorbs water evenly.
- Transfer the soaked millet to a mixer jar and grind it coarsely.
- Sieve the ground millet to remove any husks.
Step 3: Cooking the Khichdi
- Heat 8-9 cups of water in a large pan or wok (kadhai) until it begins to boil.
- Add the coarsely ground millet to the boiling water.
- Reduce the heat to low and let it cook for 30-40 minutes, stirring occasionally to prevent sticking.
- Once the millet is partially cooked, add the soaked cowpea lentils and mix well. Cook for an additional 10-15 minutes until everything blends together.
Step 4: Garnishing and Serving
- Once the khichdi is ready, serve it hot in bowls or plates.
- Drizzle 2-3 tablespoons of ghee on top for added flavor and serve with jaggery on the side.
